Fresh Tuna Tartare

Ingredients
- 6 oz Fresh tuna, Sushi grade, cut in small-diced cubes
- 2 oz Ripe mango, cut in small dice cubes
- 1 oz Ripe Avocado, cut in small dice cubes
- 1 tbsp chopped cilantro
- 1/2 tsp lemon zest
- 1 tbsp fine chopped red onion
- 1 tbsp fine chopped tomato concasse
- 1 tbsp olive oil
- 1 tsp sesame oil
- splash local hot sauce
- splash lemon juice
- 1 tbsp seedless cucumber, cut in small dice
- Salt & pepper to taste
- Sesame seeds
Directions
- Cut your sushi grade tuna into small diced cubes. It is very important to keep your tuna very well chilled.
- Place inside a plastic bag, and on ice. Or keep refrigerated until ready to mix all the ingredients.
- In a separate mixing bowl, mix all the other ingredients with the exception of Salt & pepper and Sesame seeds. Mix well.
- Transfer the cubed tuna to the mixing bowl with all the aromatics and mix lightly.
- Season with Salt & pepper to taste.
- Present on a large plate, molded in the center or in a large martini glass. Garnish with sesame Seeds. Serve very, very chilled with a side of Taro Chips. Enjoy
