Shrimp Sweet Cake

Ingredients
- 16 shrimp
- 2 sweet plantain
- 1 bunch scallion (very fine)
- Olive oil
- Salt and pepper (to taste)
Mojito (dipping sauce)
- Garlic (to taste)
- Onions
- Recao (eryngium foetidum)
- Extra virgin Olive Oil
- Limes or lemons if you can’t find a limes
- Jabanero pepper
Directions
- Chop the shrimp, the sweet plantain and the scallion.
- In a medium bowl, combine the shrimp, scallion, sweet plantain, salt and pepper to taste.
- Mix and form small cake.
- Heat the pan seared with oil and put the cake.
- When oil is nice hot seared about 2 minutes per side or until golden brown.
Mojito (dipping sauce)
- Chop the garlic, onions and recao into small pieces.
- Heat the pan and seared with oil and put the mix.
- Pour the juice of the lime or lemon
- Cut a small piece of jabanero and put in the pan.
