Shrimp Sweet Cake

Ingredients

  • 16 shrimp
  • 2 sweet plantain
  • 1 bunch scallion (very fine)
  • Olive oil
  • Salt and pepper (to taste)

Mojito (dipping sauce)

  • Garlic (to taste)
  • Onions
  • Recao (eryngium foetidum)
  • Extra virgin Olive Oil
  • Limes or lemons if you can’t find a limes
  • Jabanero pepper

Directions

  1. Chop the shrimp, the sweet plantain and the scallion.
  2. In a medium bowl, combine the shrimp, scallion, sweet plantain, salt and pepper to taste.
  3. Mix and form small cake.
  4. Heat the pan seared with oil and put the cake.
  5. When oil is nice hot seared about 2 minutes per side or until golden brown. 

Mojito (dipping sauce)

  1. Chop the garlic, onions and recao into small pieces.
  2. Heat the pan and seared with oil and put the mix.
  3. Pour the juice of the lime or lemon
  4. Cut a small piece of jabanero and put in the pan.
