Pan Seared Filet of Mahi-Mahi

Ingredients: (Fish)

  • 5 oz. Fresh filet of Mahi-Mahi
  • 2 oz. vegetable oil
  • Salt & pepper to taste
  • 1/2 lime

Ingredients: (Salsa)

  • 2 Tomatoes cut into dices
  • 1 cup of Papaya
  • 4 oz. olive oil
  • 1 tsp. balsamic vinegar
  • Salt and pepper to taste
  • Fresh cilantro
  • 4 Fresh basil leaves

Ingredients: (Salad)

  • 3 parts of olive oil
  • 1 part of acid/ balsamic
  • 1 lemon juice
  • Salt and pepper to taste
  • 1 cup of arugula
  • I radicchio leave

Directions: (Fish)

  1. Season the fish with salt and pepper to taste. 
  2. Add juice from lime in both sides of the filet. 
  3. In a sauté pan in high-medium heat, add olive oil, pan-sear the filet of fish until brownish color.
  4. Turn down the heat and cook the fish until done.

Directions: (Salsa)

  1. In a bowl mix the papaya and tomatoes, season with salt, pepper, add olive oil, vinegar and chopped cilantro.
  2. Take the basil leaves and fold them, then chop the basil.
  3. Mix all the ingredients.

Directions: (Salad and Vinaigrette)

  1. Add balsamic vinegar and juice of lemon to a bowl
  2. Whisk in the olive oil little by little until you get medium viscosity.
  3. Season with salt and pepper, and taste it.
  4. Serve arugula on top of radicchio leave
  5. Serve vinaigrette on top of salad.
