Mojito Lime Cake

Ingredients
- 2 sticks of unsalted butter
- 2 cups of granulated sugar
- 4 eggs
- 1 cup of buttermilk
- 1 tbsp. rum
- 1 tbsp. vanilla extract
- zest of 1 to 3 limes
- 3 cups of self rising flour
- 2 tbsp. chopped mint
Mojito simple syrup
- 4 oz. brown sugar
- 4 oz. granulated sugar
- 4 -6 oz. water
- 1 oz. rum
- 1 oz. of lime juice
- 1-2 tbsp. mint
Directions
- In a stand mixer with paddle attachment cream the butter and sugar until creamy and fluffy.
- Alternate wet and dry ingredients until evenly incorporated.
- Add mixture into buttered pan and bake at 350°F.
- Leave in oven until toothpicks comes out clean in center.
Mojito simple syrup
- Combine sugars and water in sauce pan until sugar is dissolved.
- Incorporate lime juice, mint and rum to your taste.
- With a toothpick incorporate holes in lime cake and with a pastry brush soak cake with simple syrup.
- Decorate with sugar merengue, lime zest and lemon slice.
